While the 15º and 20º angles that the original magnetic holder that comes with your Tumbler cover most knives (with 20º being the most common for American kitchen knives), some knives benefit from other specific angles that are narrower or broader than these.

Narrower angles (10º–12º) are typical for thin, high-performance knives, often Japanese-style—where sharpness matters more than durability. Wider angles (like 25º) suit tougher knives that need edge stability over precision.

It’s a trade-off: sharper edges cut better but dull faster, while more durable edges last longer. A 17º angle sits in the middle, sharper than the standard 20º, but less fragile than 15º.

If a brand doesn’t specify an angle, use this principle. Just note: changing angles requires removing more steel, so it takes longer, and you shouldn’t switch back and forth often.
